Valladolid and the Tradition of Tapas

The origins of the tapa date back to 13th-century Spain. According to tradition, Castilian kings would cover their drinks with slices of bread, cheese or cured ham to keep dust and insects away. Over time, this practical custom spread across the country and evolved into one of Spain’s most iconic culinary traditions, becoming a defining feature of bars and restaurants nationwide.

Valladolid has long been recognised for its rich tapas culture. Its vibrant hospitality scene and strong tradition of pinchos and tapas competitions have led to the creation of the National Pinchos and Tapas Competition, the only official national competition of its kind in Spain, now backed by more than 20 consecutive years of history.

Through this initiative, the Valladolid City Council and the Valladolid Hospitality Association continue their commitment to promoting excellence in tapas, raising the professional profile of this culinary format and reinforcing its national and international recognition.

Since its first edition in 2005, the National Pinchos and Tapas Competition has helped launch the careers of numerous chefs while showcasing some of the most innovative creations in Spanish gastronomy.

Across 21 editions, the competition has celebrated dishes that demonstrate how a single bite can combine technique, creativity, outstanding ingredients and culinary identity. Many of the winning creations have gone beyond the competition itself to become benchmarks of contemporary tapas cuisine.

With registration now open for a new edition, the competition once again places gastronomic talent, creativity and culinary diversity at the heart of one of Spain’s most prestigious events dedicated to tapas.
